Italian-Topped Garlic Bread

Me N Ed's pizza. That's what both the boys said this tasted like. I guess that's a good thing. It really did taste like pizza on a soft crust, though not necessarily a pizza I would normally order (I'm a plain cheese person, thank you very much!).
  • 1 pound Italian sausage roll
  • 1 loaf crusty Italian bread
  • 1/2 cup butter, melted
  • 2 tsp minced garlic
  • 2 cups shredded mozzarella cheese
  • 2 cups diced tomatoes, 8 oz fresh mushrooms, sliced
  • 3 Tbsp grated Parmesan cheese
Preheat oven to 325 degrees. Crumble and cook sausage in medium skilled until browned. Drain off any drippings. Cut bread into 1 inch slices. Combine butter and garlic in a small bowl; brush bread slices with mixture. Arrange bread on ungreased baking sheet.

Combine mozzarella, tomatoes, mushrooms, Parmesan and sausage; spread on slices of bread. Bake 10-12 minutes, or until cheese is melted and golden brown. Serve warm. Refrigerate leftovers.

NOTES: I used chicken Italian sausage. Not sure what brand it was, but it's what I saw at the store. Worked pretty well. No one in our family is a big fan of mushrooms. I did include them, but not nearly as many as the recipe called for.
