My friend, Austin introduced us to this recipe. If any of you have eaten at Chevy's Fresh Mex restaurant, a similar corn cake is served as a side dish with some of their entrees. My husband loves it and was ecstatic that Austin knew how to make it.

I love the simplicity of the recipe and it tastes great. It's very sweet so a small scoop is really all that is needed for each serving.
- 1 pkg (8 1/2 oz) corn bread mix
- 1/4 cup butter, melted
- 1/4 cup water
- 1 can (14.75 oz) cream-style corn
- 1 1/2 Tbsp honey
- 1 Tbsp sugar
In a bowl, combine the corn bread mix with melted butter. Add remaining ingredients and mix until well combined. Pour mixture into a 9x5 inch loaf pan. Bake, uncovered at 350 degrees for 40-45 minutes or until the liquid has been absorbed. Use an ice cream scoop to serve cake as a side dish or dessert.
