Party Potatoes

This has been one of my favorite dishes since my sister married into the Knapp family. My brother-in-law, Josh, used to make this at all the family parties. It's simple fairly hands-off and feeds a lot of people. That's probably the only drawback: you need 8 people eating in order to make this. Though I suppose you could split the recipe into two dishes and freeze one for later. There are never leftovers. :-)
  • 1 bag frozen potatoes (Ore Ida Potatoes O'Brien are best)
  • 2 cups shredded cheddar cheese (medium to sharp)
  • 16 oz sour cream
  • 10.5 oz can cream of mushroom soup
  • 1 stick butter
  • salt and pepper to taste
Mix all ingredients together in a 9x13 pan and bake at 400 degrees for an hour.

NOTES: This can be made ahead of time and frozen. Just add a bit more time when baking.

Prep Time: 5 minutes
Total Time: 1 hour, 5 minutes
