Hawaiian Rolls


As I may have mentioned before, I bought a whole bunch of pineapple juice recently with my couponing deals. Now I'm trying to find recipes that use pineapple juice. This was a not so successful recipe.
  • 6 cups all-purpose flour, plus an additional 1/2 cup, divided
  • 3 eggs
  • 2 cups pineapple juice, room temperature
  • 3/4 cup sugar
  • 1/2 tsp ginger
  • 1 tsp vanilla
  • 2 pouches (1/4 oz each) yeast
  • 1/2 cup butter, melted
In a small bowl, beat your 3 eggs. Add the 2 cups pineapple juice, sugar, ginger, vanilla and melted butter. Measure 3 cups of flour into a large bowl. Stir in egg mixture until well-combined. Sprinkle in the yeast packets, one at a time, mixing well.

Add the remaining 3 cups flour and mix well. If it becomes difficult to stir with a spoon, use your hands. Make sure all the flour is well incorporated - the dough should be tacky to the touch but not overly sticky. If it appears too wet, sprinkle more flower a tablespoon at a time. Cover your bowl with a clean kitchen towel and set in a warm place to rise for 1 hour.

Remove dough from the bowl, knead in additional 1/2 cup flour. Divide dough into three equal parts. You may either bake 3 loaves of bread, form the dough into rolls or a combination of the two. Be sure to grease your dishes, cover and place in a warm place to rise for an additional hour, or until the dough doubles in size.

Bake at 350 degrees for 25-30 minutes, or until golden brown. Brush tops with melted butter and serve warm.

NOTES: my dough did not rise very much. I had brand new yeast, but maybe I just didn't let it sit long enough? I made sure I didn't have my bowl under an A/C vent or anything, but maybe I should have heated the oven a little and left the dough in there?
