Crab Louie Seafood Salad

My friend Hilary and I were on a weekend trip to Morro Bay, CA a while ago and had the most delicious seafood Louie salad at the Flying Dutchman. It was so good that we went back the next day and got one to share to go with our planned dinner for that night. I got home and just HAD to find a recipe for it, or something similar.

I scoured Pinterest and found two potential recipes. Decided to try this one first. It was really good. The only thing I would note is that the dressing was a little spicy for me. I'd maybe tone down the cayenne for me next time. I think, at the Flying Dutchman, I actually just used ranch dressing. It definitely needs a creamy dressing. Something like a vinaigrette or Italian would just be weird to me.

This recipe is good for taking for work lunches too since you can make everything and just carry the dressing on the side. Once the eggs are hard boiled, it's a pretty fast recipe to make. I know it says it makes 2 servings, but really, I wanted an entree salad and just made a giant one for myself. Shhhhh...don't tell.
  • 8 oz lump crab meat
  • 1 6 oz heart romaine lettuce cut lengthwise into 1/2 inch strips
  • 3 hard boiled eggs, 2 cut into wedges and 1 chopped
  • 1 large Roma tomato, chopped
  • 1 large avocado, chopped
  • black olives, sliced (optional)
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 Tbsp lemon juice
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
Stir together all dressing ingredients until smooth. Set aside.

Arrange a bed of lettuce on two salad plates. Top with crab, eggs, tomato, avocado, and olives. Drizzle with dressing and serve. Store dressing in an airtight container, refrigerated. 

NOTES: I used imitation crab meat. I didn't feel like buying a can of the lump crab meat for some reason. Maybe I had a coupon? I can't remember. But it still tasted good. I'm sure fresh crab meat would taste even better, but this did the trick.
