Fruit Salsa with Cinnamon Crisps

This made a LOT of food. I mean, not a lot as in, you won't have to eat dinner with it, but a lot for a family of three to eat for dessert. I ended up taking a lot to work the next day. It was super refreshing and would be great for a spring or summer snack.

Also note, I couldn't find kiwi. Maybe they were out of season when I made this? So I just did the berries and apples and it still tasted great.
  • 10 flour tortillas, 10-inch
  • cooking spray
  • 1/3 cup sugar
  • 1 tsp cinnamon
  • 2 granny smith apples
  • 1 lemon
  • 1 cup finely diced melon or kiwi
  • 1 lb strawberries
  • 1/2 lb raspberry
  • 4 Tbsp preserves (I used strawberry)
Preheat oven to 350 degrees. Combine cinnamon and sugar and set aside. 

Working with 3 tortillas at a time, spray both sides of the tortilla and sprinkle each side lightly with cinnamon sugar. Stack tortillas and use a pizza cutter to slice into 12 wedges. Place on a baking sheet and bake 8-11 minutes, until crisp. 

Peel and finely chop apple, squeeze 2 teaspoons of lemon juice over apples and mix well to combine. Finely chop strawberries and melon or kiwi. Gently combine all ingredients, the raspberries will break apart a bit. 



Allow to sit at room temperature at least 15 minutes before serving.

Total Time: 25 minutes + sitting
