Outrageously Good Stuffed Celery

I'm not a fan of celery, but Doug and Tyler like it. They've been known to make Ants on a Log (peanut butter and raisins) before so I thought this would be a nice little change. They said it was ok, but with the cheese content, Doug couldn't really eat much. I took some to work. A little got eaten, but cut celery doesn't really last long either.
  • 4-5 stalks celery, washed and dried
  • 8 oz cream cheese, softened
  • 1/4 cup bacon, chopped
  • 1/2 cup cheddar cheese, grated
  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh chives, chopped
  • 1/4 tsp salt
  • 1/4 tsp fresh cracked pepper
  • 3 dashes hot sauce
Cut celery stalks in half and set aside. Using a food processor or hand mixer, whip the cream cheese until smooth. Add remaining ingredients. Pulse or blend until all ingredients are combined. 

Using a small spoon, fill celery boat with cream cheese mixture. Sprinkle with additional chives and bacon if desired. 

Serves 4
