Monterey Chicken

Apparently this is based on a Chili's recipe, but I've never had the original so I have no idea what it's supposed to taste like. Oh well. It was decent. Not a favorite, but we will probably do it again.

  • 4 boneless, skinless chicken breasts
  • 4 strips of cooked bacon, chopped
  • 1/2 to 1 cup BBQ sauce
  • 1/2 cup grated Monterey Jack or cheddar cheese
  • 2 Roma tomatoes, diced
  • 2 green onions, sliced
Bake chicken in a 9 x 13 inch pan at 350 degrees for 20-30 minutes, or until juices run clear. The thinner your chicken, the faster it will bake. Smother both sides of the chicken with BBQ sauce. Bake 3-5 more minutes. Top with bacon and grated cheese; broil for 30-60 seconds or until cheese melts. Garnish with tomatoes and green onions.
