Cherry & Balsamic Glazed Pork Chops

This was a very different recipe. I'm not usually a fan of cherry. I like cherry-flavored things: Popsicles, Jolly Ranchers, Now and Laters.... you get the idea. The actual cherry fruit is a different story. This had enough other flavors that I could easily avoid being overcome with the cherry-ness of the pork. It was a great recipe for something a little different.
  • 4 center cut pork loin chops
  • salt and pepper
  • olive oil for pan
  • 1 large shallot, thinly sliced
  • 4 Tbsp balsamic vinegar
  • 3 Tbsp cherry preserves
  • 1 Tbsp water
  • 1 Tbsp butter
Season pork chops with salt and pepper. Heat a drizzle of oil in a frying pan and cook chops till brown, 4-5 minutes. If they are thick chops you can butterfly them. Remove from pan and keep warm. 

Add more oil and the shallots to the pan. Cook 4-5 minutes. Add vinegar and stir till syrup-y; this happens fairly quickly. Stir in cherry preserves and water. Add butter. Taste and add salt and pepper if needed. Toss pork chops in glaze to coat and warm them up. Serve chops with extra glaze spooned on top.
