So good we've made them twice already. This was a huge hit with our life group and we made them again for another gathering shortly thereafter. So tasty and reheats pretty well, if you have any leftovers.
- 10 oz refrigerated pizza crust
- 2 cups (8 oz) shredded mozzarella, divided
- 1 oz (1/4 cup) fresh Parmesan cheese, grated
- 2 Tbsp fresh basil leaves, chopped, or 2 tsp dried basil
- 2/3 cup mayonnaise
- 1 garlic clove, pressed
- 4 plum tomatoes, thinly sliced
Preheat oven to 375 degrees. Using lightly floured roller, roll crust on a baking stone into a 12" x 15" shape. Sprinkle with 1 cup mozzarella. In a medium bowl combine remaining mozzarella, Parmesan, basil, and mayonnaise and mix well. Press garlic over mixture and mix.
Arrange tomatoes in a single layer over the mozzarella on the crust. Scoop other mozzarella mixture over the tomatoes and spread to cover evenly. Bake 15-20 minutes or until top is golden and bubbly. Serve warm.
NOTES: you can see we didn't have a rectangle pizza stone, but our circle one worked just as well.
