Mal's Corn Dodgers

Blah. These tasted like nothing. They just...were. Nothing to them. I suppose I should have known since there aren't that many ingredients, but dang!

  • 2 cup ground cornmeal
  • 1/2 tsp salt, plus extra
  • 1 Tbsp bacon grease, plus extra for frying
  • 1 1/2 cups boiling water
Combine the cornmeal and the salt in a medium mixing bowl and stir in the bacon grease. Pour the boiling water over and stir it all up. Let it sit for 20 minutes or so. 

Scoop a couple tablespoons worth of the batter into your hand and form into a flattened oval, similar to the shape of an ear of corn, about 2-3 inches long and 1 inch wide. Repeat with the rest of the batter. 

Heat a frying pan over medium-low heat and add a little bacon grease. When it's hot, fill the pan with dodgers, not crowding them too close. Fry for around 8 minutes on the first side, then flip and fry for about 5 minutes on the other side. The dodgers should be a nice crisped brown on each side. 

Serve alone or with a dipping sauce of your choosing. Sprinkle with a little salt before eating.
