Easy Homemade Biscuits

I was a little nervous about trying to make a bread from scratch. I feel like I've done it before and the yeast is wrong, or I don't knead it right, or it takes forever....I tried this while my mom was in town, thinking she'd keep me on track and we'd succeed together. We did! It actually was super easy and tasted great. I'd totally make these again.
  • 1/3 cup butter, softened and cubed
  • 2 1/4 cups self-rising flour
  • 1 cup buttermilk
  • 3 Tbsp melted butter
Preheat oven to 450 degrees. Cut softened butter into flour with a pastry blender or 2 forks just until butter cubes are coated with flour. Using your hands, gently combine until mixture resembles small peas. Stir in buttermilk with a fork just until blended. Mixture will be wet. 

Turn dough out onto a generously floured surface, and pat to 1/2 inch thickness. Cut dough with a well-floured 2-inch round cutter, and place on a lightly greased baking sheet. 

Bake for 9-11 minutes or until lightly browned. Remove from oven, and brush warm biscuits with melted butter. Serve immediately. 

NOTES: I used Saco dried buttermilk and it worked just fine. Also, the recipe says it makes 1 1/2 dozen biscuits. I only got 10 out of it. Maybe my cutter was a little larger? Didn't seem like it though.
