Reese's Pieces Cookies

My friend Austin makes this recipe anytime we meet up at our friend's beach house in Morro Bay. It's a hit every time. He said it used to be on the back of the Trader Joe's pancake mix box, but it isn't there anymore. I call them Austin cookies anyway, so there!
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 tsp vanilla
  • 3 cups Trader Joe's baking mix
  • 1 cup packed brown sugar
  • 1 cup (6 oz) Reese's Pieces

Preheat oven to 375 degrees.  Add softened butter, eggs and vanilla to a large bowl. Blend with a spoon until creamy. Stir in baking mix, sugar, and Reese's Pieces. Roll a heaping teaspoon into a ball and drop onto a lightly greased cookie sheet, 2 inches apart. Bake for 10-12 minutes or until light golden brown. For a chewier cookies, remove cookies a few minutes earlier and allow to cool. 

Serves 2 dozen
