Olive Garden's Shrimp Scampi

I made this recipe twice. Not because it was that great, but I kind of failed the first time. It was one of those that should have gone really smoothly but something was just off that night after work. My cheap white wine was so old it was bad and I forgot to shell the shrimp so the flavors didn't really soak in well and, yeah, it was just a mess. Like I said, if was an off night.

So I made a second attempt and still wasn't that impressed. The pasta is bland since it's not soaked in the flavoring that the shrimp is and overall, it just doesn't have that great of a taste. Doug didn't mind it, but Tyler and I were not fans. Maybe you can tell me how to make it better?

  • 1 1/2 lb medium fresh shrimp, shelled
  • 2 Tbsp olive oil
  • 1 medium onion, diced
  • 1/2 cup white wine
  • 3 garlic cloves, crushed
  • 3 Tbsp parsley, finely chopped
  • 1 pinch crushed red pepper
  • 4 oz butter
  • 1/2 lb angel hair pasta, cooked according to package directions
  • salt and pepper to taste
Heat oil in a suate pan. Add onion and saute for 2 minutes. Add garlic and saute for 1 minute, do not brown. Add butter, wine, red pepper, parsley,
salt and pepper and reduce by half. Add shrimp and cook 1-2 minutes until fully cooked. Transfer pasta to plate and top with shrimp mixture.

Serves 4

Prep Time: 25 minutes
Total Time: 35 minutes
