Candied Peanuts


This recipe was originally for candied almonds, but Doug had been craving these roasted candied peanuts we saw on vacation one year so I decided to attempt it. 

Doug ended up not being a huge fan of the nuts, but my co-worker loved them. She said they can get a bit scratchy on the roof of your mouth if you eat too many, but she still liked them.
  • 1 1/2 cup brown sugar
  • 1 1/2 cup white sugar
  • 3 Tbsp cinnamon
  • 1/8 tsp salt
  • 1 egg white
  • 2 tsp vanilla
  • 4 1/2 cups nuts
Stir sugars, cinnamon and salt together in medium bowl. In a small bowl, mix egg white and vanilla. Pour nuts into large bowl. Pour egg and vanilla over nuts. Mix to coat nuts. Stir in dry ingredients. 

Spray non-stick spray on slow-cooker and pour in nuts, mixing more as you pour and smooth into an even layer in crock pot. Cook on high for 3 hours. Enjoy!

NOTES: I forgot the cooking spray. This is an important step apparently, because a lot of mine got stuck on the bottom of the pot and burned a bit. Plus it made it super difficult to clean the pot when I was done. Never underestimate the power of cooking spray.
