Onion Roasted Potatoes

I tend to be skeptical of recipes on the side of ingredients boxes, just because I feel like I'm trusting my taste buds to a biased recommender. Then I remember the Friends episode where Monica spends the entire time trying to figure out the secret recipe for Phoebe's grandmother's chocolate chip cookies. Spoiler alert: it ends up being the recipe from the wrapper of the Nestle Tollhouse cookie dough tube. So in the spirit of trusting the people who created the ingredient to know the best way to use it, I snagged this recipe from the onion soup mix box. Success!

This recipe has all the best things going for it: few ingredients, cheap ingredients and little to no work involved. We served this alongside crock pot pulled pork sandwiches (I'll post that recipe later) for a simple but filling meal.
  • 1 envelope onion soup mix
  • 4 medium all-purpose potatoes (about 2 lbs), cut into large chunks
  • 1/3 cup olive oil

Preheat oven to 425 degrees. In a 13x9 inch baking or roasting pan, combine all ingredients. Bake, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.

Not special notes on this one. Everything went according to plan!
