
These little boogers are great for a quick after-work side dish or an easy potluck bring-along. Most of the work is already done for you since you are using pre-made biscuits. Basically all you are doing is adding some flavor and the shape. We all loved the taste: yummy Parmesan and oregano with your classic buttermilk biscuit flavor hiding underneath it. I thought they would be heavier tasting but they were actually pretty light and fluffy. We served these as a side dish to another family favorite, Texas Taco Joes. I'll have to make another post about that recipe later.
- 1 tube (12 oz) refrigerated buttermilk biscuits
- 1/4 cup canola oil
- 3 Tbsp grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp dried parsley flakes
Cut each biscuit into thirds. Roll each piece into a 3 inch rope and tie into a knot; tuck ends under. Place 2 inches apart on a greased baking sheet. Bake at 400 degrees for 8-10 minutes or until golden brown. In a large bowl, combine the remaining ingredients; add the warm knots and gently toss to coat.
NOTES: Instead of putting the baked knots in a bowl to coat them, I've started throwing them in a large ziplock with the dry ingredients and coating them that way. You just have to be careful that you let them cool a smidge, otherwise you will melt your ziplock. Much easier and cleaner. Also, this recipe travels pretty well. Measure out the dry ingredients into a large ziplock before going wherever and then all you have to do is bake and coat the knots when you arrive.
Get ready for the coming weeks. I'm trying 2 new desserts that hopefully will turn out really great. But then again, how can chocolate not be great?
