I think in future weeks, maybe once a month, I'll have us invite a different person/couple to our Monday night dinner just to mix things up. We had a wonderful salad (made by our friends Myrti and Gene), Allan was the grill master and with Doug made some delicious grilled skirt steak fajitas, and I made another batch of the chocolate raspberry hearts for dessert. Doug and Dale's girlfriend, Okie, also made this week's featured recipe of onion & cheddar biscuits which turned out great. Tyler really liked them and even took some cold leftovers in his lunch the next day. They weren't too difficult to make with the only really random ingredients being buttermilk and white balsamic vinegar. This is definitely a "keep" recipe.
- 1/4 cup finely chopped sweet onion
- 4 Tbsp cold butter, divided
- 1/4 cup white balsamic vinegar
- 1 cup all purpose flour
- 1 Tbsp sugar
- 1 1/2 tsp baking powder
- 1/4 tsp garlic salt
- 1/4 tsp pepper
- 1/8 tsp cayenne pepper
- 1/2 cup shredded cheddar cheese
- 2 green onions, chopped
- 1/4 cup buttermilk
So they're not the prettiest things, but they're good! |
NOTES: Oddly enough I actually have biscuit cutters from when I made crumpets as I threw a Harry Potter birthday party for myself last year (yes, you read that right). However, Doug thought they would be a little big and cause us to make either thinner or fewer biscuits. We ended up using a plain circle cookie cutter that was maybe 3/4 the size of the recommended diameter. They were perfect in size. It's really up to you and what you are looking for. We definitely cooked these at the longer end of the spectrum because they weren't browning nicely yet.
