I made this for a girls get-together many moons ago. It was really simple and works great for parties. It's easy to toss it together, throw it in the oven, and then set it out. Who cares if it gets cold later? It's cheese and olives. It still tastes great!
- 8 oz block feta
- 1 cup pitted olives (I mixed manzanilla, black, and Kalamata)
- 1/2 cup sun-dried tomatoes
- 1/3 cup olive oil
- 3 cloves garlic, thinly sliced
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- kosher salt
- fresh cracked pepper
- fresh chopped parsley, for garnish
- sliced French bread or crostini for serving
Heat oven to 350 degrees. Place feta in a small baking dish. Add olives and tomatoes around the feta.
In a small bowl, combine the olive oil, sliced garlic, oregano, thyme, rosemary, salt, and pepper. Pour mixture over the block of feta, olives, and tomatoes.
Bake for 20 minutes. Broil for 1-2 minutes. Garnish with parsley and serve on bread or crostini.
