It didn't taste good. :-( It was a great idea for a recipe, but the flavor didn't soak into the chicken. It was very plain tasting and just not worth making again.
We added the waffle to have a little more to eat. We figured we'd try the chicken and waffles craze. Meh.
- 1/4 cup maple syrup
- 1/4 cup soy sauce
- 1/4 cup chopped scallions, white and green parts
- 1 1/2 Tbsp rice wine or apple cider vinegar
- 3 garlic cloves, minced
- 1 tsp freshly ground black pepper
- 15 chicken wings, about 3 pounds, patted very dry with paper towels
- 8 strips bacon
In a large bowl, combine the maple syrup, soy sauce, scallions, vinegar, garlic, pepper and mix well. Add the chicken wings and toss them gently in the mixture. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 2 hours or overnight.
Preheat the oven to 450 degrees. Slice the bacon in half lengthwise. Remove the wings from the marinade and wipe off any clinging garlic or scallion pieces. Tie up each chicken wing with a bacon piece and lay the wings, tips up, on a large baking pan. Cover the pan loosely with foil and bake for 30 minutes. Uncover the dish and continue to bake until golden crisp, another 10-15 minutes.
NOTES: I cleaned up the recipe verbiage. It wasn't really "dirty" or explicit, but it had a lot of innuendo that makes sense with the theme of the book, but isn't necessary for making the recipe.
