Low Carb Egg Roll in a Bowl

This was good for something different. A while ago I was trying to watch my carb intake (it didn't last long) and this was a recipe I found to fit that diet. I enjoyed the recipe, though I don't think it will ever be a favorite.
  • 1 lb ground sausage or turkey
  • 1/2 white onion, sliced
  • 4 cloves garlic, minced
  • 1 Tbsp ginger, minced
  • 1 Tbsp soy sauce
  • 1 small head cabbage, shredded or spiralized
  • 1 cup shredded carrots
  • 8 oz mushrooms, sliced
  • 1 Tbsp sesame oil
  • 1/4 cup chopped green onion
Cook sausage with onion in a large skillet over medium heat, making sure meat is crumbled and cooked through. Do not drain. Stir in garlic, ginger, and soy sauce. Add cabbage, carrots, mushrooms, and stir for a few minutes, till softened. Remove from heat; stir in sesame oil and top with green onions.

NOTES: I purchased bagged, shredded cabbage, rather than have to chop or spiralize it on my own. It worked just fine. 

Serves 4
