Better Than Take-Out Fried Rice

We have made this recipe 3 times so far. The first time it was amazing, but something was different the last 2 times. Not sure what it was. We used shrimp instead of chicken every time. My guess is we sauteed the shrimp in garlic butter the first time and not the other two times? Adding garlic seemed to help.
Doug added some salmon to his rice
  • 4 cups rice, cooked
  • 1/2 boneless chicken breast, cooked and cut into bite-sized pieces, or same amount of medium sized cooked shrimp
  • 1 cup peas and carrots, frozen
  • 1 white onion, chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 3 Tbsp sesame oil
  • 1/4 cup soy sauce
Heat sesame oil in a large skillet on medium heat. Add onion, garlic, peas and carrots. Stir fry until tender. Crack eggs into pan and scramble, mixing throughout vegetables. 

Add rice, meat and soy sauce to pan. Stir to combine all ingredients and remove from heat. 

Serves 4

Prep Time: 10 minutes
Total Time: 25 minutes (includes cooking rice and meat)
