Who here knows the secret to making iced coffee? I sure don't. One would think it's coffee and ice. Somehow, I don't think that's all there is to it. Either way, someone needs to teach me and we will try this recipe again.

We wanted to make a pretty cup (had to have a nice photo for the blog, of course), so we pre-warmed a glass mug with hot water. We brewed the (medium roast) coffee directly into the mug and let it sit for a few minutes. We added ice. Apparently we added ice too fast. :-( All of a sudden there was a mad dash to find another cup because we could hear and see spider-webbing on the glass as it was shattering in slo-mo. The crisis was averted with another glass but the coffee was still a bit watery tasting. We thought it might be because the ice had too much time to melt. But after a second cup with an ice ball instead of ice cubes (melts slower), it was still not strong. Maybe we need a dark roast coffee?
- 6 oz iced coffee
- 1 oz spiced rum
- 1 oz butterscotch schnapps
Combine in a glass with ice and stir. Add sugar to taste. Top with whipped cream and garnish with coffee beans.
