I'm branching out, what can I say? Me? Eating mushrooms? I know. It's a shock. :-) But it still tasted really good!
- 10 oz packaged frozen chopped spinach, thawed, drained
- 4 oz fresh whole mushrooms, coarsely chopped
- 1/2 cup pizza sauce
- 1/4 cup plus 2 Tbsp freshly grated Parmesan cheese, divided
- 1-2 cloves garlic, pressed
- salt and black pepper to taste
- 10 oz package refrigerated pizza dough
- 2 cups shredded mozzarella cheese, divided
- 2 plum tomatoes, thinly sliced
Preheat oven to 425 degrees. Squeeze the moisture from the spinach. Combine the spinach, mushrooms, pizza sauce, 1/4 cup Parmesan cheese, and garlic in a medium mixing bowl and mix well. Season with salt and pepper.
Unroll the dough and roll into a 10x14 inch rectangle on a lightly floured surface. Fit into an 8x12 inch baking dish with sides of the dough extending evenly over the sides of the dish and press lightly.
Sprinkle with 1 cup of the mozzarella cheese. Layer with the spinach mixture, remaining 1 cup mozzarella cheese and tomatoes. Make a diagonal slit in the dough at each corner. Bring the sides of the dough together at the center and twist to seal. Sprinkle with remaining 2 Tbsp of Parmesan cheese.
Bake for 15-20 minutes or until golden brown.
NOTES: I have no idea what they meant about making the slits in the corner and bringing it all together to seal it in the middle. I thought, calzone? I mean, I guess it is called "stuffed?" It looks a little funny... No matter what it had a very strong flavor throughout the pizza and everyone really liked it.
