This was a nice and easy, fairly light pasta dish. Nothing crazy needed, but also nothing super special.
- 3 boneless, skinless chicken breasts cut into bite-size pieces
- 12 oz package rotini pasta
- 1 cup julienned sun-dried tomatoes (oil drained, reserve oil)
- 2 Tbsp oil from tomatoes
- 1 tsp crushed garlic
- 1 tsp dry basil
- 1 tsp garlic powder
- 1 tsp salt
- Parmesan cheese
Try to prepare the pasta and chicken mixture simultaneously to save some time. Prepare pasta according to directions on package. Drain and place in a large pasta bowl. Heat 2 Tbsp reserved oil from tomatoes in a skillet on medium heat. Add chicken pieces to skillet. Add crushed garlic, basil, garlic powder, and salt. Sauté approximately 5-7 minutes, until chicken is cooked through.
Add sun-dried tomatoes to chicken mixture and stir. Reduce heat and sauté for 3 minutes. Remove from heat. Toss chicken-tomato mixture with prepared pasta. Add additional olive oil if desired. Sprinkle with Parmesan cheese before serving.
