Apple and Bleu Cheese Tossed Salad

I am not a fan of the moldy cheese. It's gross and should not exist. However, my husband, Doug, loves bleu cheese. Also, this recipe is from his aunt and so he HAD to try it. We made it with the bleu cheese on the side so that I could also partake and it was pretty good!

 Red Wine Vinaigrette

  • 1/4 cup red wine vinegar
  • 1/3 cup salad oil
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, crushed
  • 1/2 tsp salt
  • 1/4 tsp oregano
  • 2 Tbsp sugar
  • dash of black pepper
Apple and Cheese Salad

  • 6 slices bacon
  • 2 Golden Delicious apples
  • 2 Tbsp or less lemon juice
  • 3-4 cups torn red leaf lettuce
  • 3-4 cups torn spinach
  • 1/3 cup coarsely chopped cashews
  • 1/2 cup crumbled bleu cheese
  • 1/2 cup sliced mushrooms
For the vinaigrette: whisk the ingredients together in a small bowl and set aside.

For the salad: Fry the bacon until crisp and crumbly. Meanwhile chop apples into bite sized pieces. Toss the apples with lemon juice in a medium bowl to slow the browning (if serving immediately, you can omit this step). In a large salad bowl mix all salad ingredients and pour dressing on to coat. 

NOTES: I lowered the amount of nuts from 1/2 cup to 1/3 because it was just a LOT of nuts. Doug did comment that the bleu cheese didn't really add much to the salad. Maybe we needed a stinkier cheese?
