Mint Chocolate Chip Pudding

Soooooo I may have neglected to mention to the boys that I was using sugar free pudding when I made this. They figured it out because of the taste. Definitely recommend not skimping on this dessert for that reason. Also, if you don't like mint, you definitely won't like this. It's quite minty fresh. 

  • 1 pkg vanilla instant pudding
  • 2 cups milk
  • 4-5 drops peppermint extract
  • 4 drops green food coloring
  • 1/2 cup miniature chocolate chips
Open the package of pudding and pour the powder into a 4 cup sealable container. Pour 1/2 cup milk over the powder. Stir to mix it well. Add the peppermint extract and stir. Add the remaining milk and put the lid on. Shake the container for 1 minute. 

Open the container and add the food coloring. Stir until the pudding is all green. Put the container in the refrigerator for 5 minutes.

After the 5 minutes are up, add the chocolate chips to the pudding and stir. Serve chilled.

Serves 4
