Shrimp Tomato Aspic

Sooooo I didn't know what aspic was. Apparently, there was a time when people put everything edible in Jell-O. And by everything, I really mean EVERYTHING. Google it. It's the stuff of nightmares. Anyway, as I was cooking through these old cookbooks I have, I saw this recipe, read it, and went, "Why in the world does this recipe sound like shrimp and cocktail sauce mixed with Jell-O?" Well Carolyn, that's because it is. 

Normally I would have never even looked at this recipe again, but I sent a picture of it as a joke to a friend and to my husband. That's when things got interesting. They decided we should try to make it. I'm usually not up for dares, but I figured this wouldn't kill me. Maybe it would taste like a jiggly shrimp cocktail? Spoiler alert: it did not. 

  • 2 cups tomato juice
  • 1 pkg lemon Jell-o
  • 1 Tbsp lemon juice
  • 1/2 cup finely chopped celery
  • dash Worcestershire sauce
  • 1 can shrimp
  • 1 small can sliced black olives, optional
Heat tomato juice. Dissolve lemon Jell-O. When cool, add lemon juice, celery, Worcestershire sauce, olives, and shrimp. Serve on a mound of greens with mayonnaise.

NOTES: As you can see, I did not waste a "mound of greens with mayonnaise" on it. There is a video of me and Doug trying it but the file is too big to upload here. I'll work on that. 

Serves NO ONE
