This was a refreshing, cool dip. No need for cooking, no spice. Just chop a few things up and you're good to go. The only thing I might change about it is adding a little more onion. I'm a fan of red onion and there just wasn't enough for my taste.
- 2 ripe medium avocados, fleshed and diced
- 4 oz feta, cubed
- 3 medium Roma tomatoes, seeded and diced
- 1/3 cup diced red onion
- 2 cloves garlic, minced
- 1/2 cup chopped parsley (or cilantro)
- 1 Tbsp extra virgin olive oil
- 1 Tbsp apple cider or white vinegar
- 1/2 tsp fine sea salt
Add all ingredients to a medium bowl and sprinkle with salt. Gently fold together ingredients with a large spoon until combined. Do not mash the avocado. Serve with crackers, chips, flatbread, or on its own.
Makes 4 cups
