Who doesn't love Muddy Buddies? Or some people call it Puppy Chow. Here is a lemon version of that for a little bit of a change.
- 5 cups Rice Chex
- 4 cups Corn Chex
- 1 1/2 cups white baking chips
- 4 tsp grated lemon zest
- 2 Tbsp lemon juice
- 1/4 cup butter, softened
- 1 1/2 cups confectioners' sugar
- 1/4 cup yellow coarse sugar, optional
Pour over cereal; toss to coat well. Spread onto waxed paper to cool for about 20 minutes. Add confectioners' sugar and, if desired, coarse sugar to coat. Store in an airtight container.
NOTES: I know the recipe says to use a double boiler to melt the baking chips but you can totally do it carefully in the microwave if that's all you've got. Also, don't make the same mistake I did. I followed the instructions and my puppy chow ended up being soggy. Turns out the trick is to let the coated cereal cool at least 20 minutes before trying to add the powdered sugar (I updated the instructions above to say this). If you coat the cereal right away then it's just gross.
