I'm trying to be an adult and be healthier, but veggies and I just don't get along. I thought this might be a great way to get some greens into my diet, but I'm sorry, this was just too much veggie and not enough egg for me. I will admit I used 3 eggs and the equivalent of 3 egg whites, so that could have been part of the problem too.
- 1/2 cup chopped fresh broccoli florets
- 1/2 cup diced fresh mushrooms
- 1/2 cup diced red bell pepper
- 1/2 cup diced orange bell pepper
- 1 cup fresh spinach
- 6 large eggs
- 1/4 cup 1% milk
- 1/4 tsp ground black pepper
- 1/8 tsp salt, or to taste
- butter flavored cooking spray
- grated cheddar cheese, optional
Heat a medium skillet over medium heat. Spray with non-stick cooking spray. Add broccoli, mushrooms, red and orange pepper to the skillet. Sauté about 5 minutes, until the veggies begin to soften. Add spinach and cook another 2 minutes to wilt the spinach.
While the veggies are cooking, add the eggs, milk, pepper and salt to a mixing bowl. Whisk completely to blend the eggs. The longer the eggs are whisked, the fluffier they will be when cooked.
Add the egg mixture to the veggies. Let cook about 1 minute, until eggs begin to set. Push the eggs toward the center of the pan and gently fold over. Tilt pan slightly to allow the liquids to cook through. Continue to do this until the eggs are set. If adding cheese, do so now.
Remove from heat and let rest one minute. Serve hot.
NOTES: As I mentioned before, this just seems like waaaay too many veggies for the egg ratio. Maybe I was picturing more of an omelet? Also, I had a terrible time with my eggs sticking to my pan. I sprayed when I added the veggies, but once I added the eggs, it was all downhill (see photo). I'm not sure if I should have sprayed more, or used a different pan or what. Suggestions?
