Feta Bruschetta

Oh man, this was an AMAZING recipe. We absolutely loved this recipe and will be making it again very soon. You could probably modify it if you needed to and serve it with crackers and not baked. It would still be wonderful.

  • 1/4 cup butter, melted
  • 1/4 cup olive oil
  • 10 slices French bread (1-inch thick)
  • 1 package (4 oz) crumbled feta cheese
  • 2-3 garlic cloves, minced
  • 1 Tbsp minced fresh basil or 1 tsp dried basil
  • 1 large tomato (or 2 Roma), seeded and chopped
Preheat oven to 350 degrees. In a small bowl, combine butter and oil; brush onto both sides of the bread. Place on a baking sheet. Bake at 350 degrees for 8-10 minutes or until lightly browned on the top. 

Combine the feta cheese, garlic, and basil; sprinkle over toast. Top with tomato. Bake 8-10 minutes longer or until heated through. Serve warm. 

NOTE: this says it serves 10 but it would be a very small serving for 10 people. Especially when people taste how yummy these are: they will want more! Also, if you have leftovers (and that's a very big "if") you can reheat them in a toaster oven. I actually drizzled some balsamic over them too for a little extra punch.
