Chicken Biscuit Pot Pie

This wasn't bad. I wouldn't say it's a favorite, but it definitely wasn't bad. It's a good winter meal, hearty and warm.

  • 1 2/3 cup frozen mixed vegetables, thawed
  • 1 1/2 cups cubed, cooked chicken
  • 1 can (10.75 oz) condensed cream of chicken soup, undiluted
  • 1/4 tsp dried thyme
  • 1 cup biscuit/baking mix
  • 1/2 cup 2% milk
  • 1 large egg
Preheat oven to 400 degrees. In a large bowl combine the vegetables, chicken, soup, and thyme. Pour into an ungreased deep-dish 9-inch pie plate. 

Combine the biscuit mix, milk, and egg; spoon over chicken mixture. Bake until topping is golden brown and toothpick inserted in the center comes out clean, 25-30 minutes.

NOTES: My biscuit mixture was pretty thin. I don't know if it's because it was older Bisquick or what, but I could pour my biscuit mixture over the ingredients in the pan, no spooning needed.
