Jayne's Pork Hash

This is another recipe from my wonderful Firefly cookbook. Though maybe someone can educate me? What exactly is "hash" supposed to be? Of course I've heard of hash browns and corned beef hash. Is it just a mush of some kind? We were asking ourselves that question as we made this. Is it supposed to look like a pancake? Is it like scrambled eggs? Your guess is as good as (or better than) ours. 

  • 1 cup white or yellow cornmeal
  • 1 cup whole milk
  • 1 Tbsp brown sugar
  • 1 tsp salt
  • 1 1/2 cups boiling water
  • 1 lb pork sausage, cooked, drained, crumbled
  • lots of butter
Lightly grease a loaf pan and set aside.

Mix up the cornmeal, milk, sugar, and salt in a saucepan. Place over medium heat, and pour in the boiling water. Stir and cook until it's thick and bubbly, about 5 minutes. Remove from heat and stir in sausage. Pour mixture into loaf pan and chill until you're ready to eat. 

When ready to eat, melt butter in a frying pan over medium-high heat. By serving size scoops, drop into frying pan. Stir a little, until crispy. Eat with eggs. 

NOTES: you can see based on our photo that we weren't really sure how to cook it. We made one patty, and then one big mess with the rest (that got stuck to the pan, by the way). Please let me know if you try it and what your tips are. Maybe we just didn't use enough butter?
