Bailey's Chocolate Truffles

I am definitely adding commentary to this recipe so you don't do what I did...twice. Yes, I didn't write myself notes after I made this the first time and went to make it again and made the SAME MISTAKES. Learn from me. 

All in all, yummy recipe. Very rich, very creamy, potentially very messy (again, learn from my mistakes). I'd aim smaller rather than larger when making the individual truffles. 

  • 8 oz cream cheese, room temperature
  • 4 Tbsp butter, room temperature
  • 2 Tbsp Bailey's Irish Cream
  • 1/2 cup crushed graham cracker crumbs
  • 4 cups powdered sugar
  • 1 12-oz package chocolate chips
  • 1 12-oz package white chocolate chips
Cream butter and cream cheese together until light and fluffy. Mix in the graham cracker crumbs and Bailey's Irish Cream. Add the powdered sugar, 1 cup at a time, until completely mixed in. Cover and chill in the fridge at least 2 hours.

Meanwhile add about 4 ounces of chocolate chips to a microwave safe bowl and heat in 30 second increments until completely melted. On a parchment paper-covered cookie sheet drop quarter-sized circles of chocolate. These will form the base for your truffles. Place cookie sheet in freezer for a few minutes to harden the chocolate. 

Scoop batter into balls and place on the chocolate coins. Place balls in the freezer for 10-15 minutes. While batter is freezing, melt remaining chocolate in microwave. Cover balls with remaining chocolate, alternating colors of chocolate, if you wish. Let balls cool on cookie sheet until chocolate has hardened. Drizzle remaining melted chocolate over the truffles. Store chilled. 

NOTES: The dough is super sticky. I don't know if that can be helped with more graham cracker or not. Haven't tried it yet so the measurement listed here is the original. Let me know if you try it with 3/4 cup of graham crackers. Also means my balls don't always look very ball-like. I need to get some cookie dough scoopers to help with that. 

I added the instructions about putting some chocolate down first, then the balls, then more chocolate. If you just put the balls down and then try to pick them back up to cover them in chocolate - no bueno. They are so sticky that they don't even attempt to resemble a ball when you pick it up, plus the chocolate just gets all over the place. Trust me: chocolate, ball, chocolate. The filling never hardens no matter how long you freeze them.
