I like cauliflower and this recipe was ok. Not bad, not good. I think it could have done with a little more flavor. Maybe next time I'll be a little more generous with my use of paprika? It just needs something.
- 1 medium head of cauliflower, broken into florets
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup crushed cornflakes
- 1/4 cup chopped green pepper
- 1/4 cup chopped sweet red pepper
- 1 tsp salt
- 1/4 cup grated Parmesan cheese
- paprika
In a large bowl combine the cauliflower, sour cream, cheddar cheese, cornflakes, peppers, and salt; transfer to a greased 2 quart baking dish. Sprinkle with Parmesan cheese and paprika.
Bake uncovered at 325 degrees until heated through, 30-35 minutes.
