These were some AWESOME loaded baked potatoes we made at the coast one weekend. And when I say we, I mean Doug and the others with us. I don't do chili. :-) Taste of Home had a whole page of recipes for variations on the plain old baked potato (which I'm still a super fan of) to spice things up a bit.
- 4 baker potatoes
- olive oil for drizzling
- 2 cups Frito corn chips
- 2 green onions, chopped
- 2 cans of your favorite chili
- 2 cups shredded cheddar cheese
- 4 hot dogs or hot links

Scrub your potatoes to remove any dirt. Poke each potato at least 8 times all over and place on a microwave safe plate. Drizzle a little olive oil over each potato and cover. Heat in microwave, on high, for 5 minutes. Carefully turn potatoes over and heat another 5 minutes, or until a fork inserted in the potatoes goes in smoothly.
Cut the potatoes carefully in half and top your potato as you see fit. Personally, I like to put the cheese on first so it melts, then I add everything else!
