Chocolate Cake Mix Cookies

I've had some cake mix in my pantry for a good long time now. I haven't had cookies in forever so I started looking for ways to combine the two issues. Cake batter cookies!

These were pretty good. They didn't stay as soft as I thought they would once they cooled, but they were still softer than some of the rocks called cookies you can purchase at the store (*cough* Chips Ahoy *cough*). Good flavor, and you could totally swap out chocolate cake mix for other flavors and make it your own.
  • 15 oz box of chocolate cake mix
  • 2 eggs
  • 1/3 cup olive oil
  • 1 cup semi-sweet chocolate chips
Preheat oven to 350 degrees. Add cake mix, oil, and eggs to a mixing bowl and beat until batter forms. Fold in chocolate chips. Drop by spoonfuls onto a parchment-lined baking sheet. 

Bake for 12-15 minutes, until cookies flatten and tops look done. Transfer to a cooling rack once done baking.

NOTES: Mine did not flatten at all. I spaced my cookies on the sheet pretty far, anticipating they would flatten out quite a bit, given the instructions. I think I can safely say they didn't flatten...at all. Not sure if it was the old cake batter or just some other minor difference, but don't freak out if yours don't either.
