Instant Pot Creamy Tomato Pasta

This was a REALLY good recipe. Very simple but full of flavor. Quick to make but looks fancy when you're done. Only thing that was a bit of a downer in our house was the level of creaminess. We've decided Tyler inherited his dad's lactose intolerance and so these cheesy dishes can be a bit.....interesting? Thank goodness for Lactaid. For me who doesn't have trouble with cheese, it was delicious!
  • 8 oz short pasta (penne, rotini, ziti)
  • 1 1/4 cups chicken broth
  • 1 1/4 cups heavy cream
  • 1 cup red pasta sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • fresh basil or parsley to garnish
Place the pasta noodles in the liner of the Instant Pot. Pour the chicken broth and heavy cream over the noodles. Press the noodles down so they're mostly covered by the liquid. Pour in the pasta sauce and top it with the dry ingredients. Do not stir!

Close the lid, and close the valve to seal. Use the pressure cook button and adjust the time to 5 minutes. After time is up, use the quick release valve. Stir the noodles and sauce. Top with your favorite cheese, fresh basil or parsley.

NOTES: The original recipe said it would serve 4. Maybe if you ate it in addition to something else that would be true. All we had was this pasta for our meal (sorry, I hate to have 5 different things cooking for a meal for just the three of us. I just don't want that much stress), so each of us got a full bowl and each of us finished our full bowl.

Serves 3

Prep Time: 5 minutes
Total Time: 20 minutes
