Pulled Pork Pastry Puffs

I couldn't find any pre-packaged pulled pork. I know some companies used to make it and sell it in the deli section of the grocery store, but I couldn't find it anymore at WinCo. I asked; they said they didn't carry it anymore. However, I was already planning on making some BBQ Brisket sooooooo, we just used that for our meat instead. Turned out great.
  • 1 package (17.3 oz) puff pastry, defrosted
  • 3/4 lb pulled pork
  • 3/4 cup BBQ sauce
  • 1 1/4 cup shredded cheddar
  • 1 egg, beaten
  • 1 Tbsp water
Preheat oven to 400 degrees. Line baking sheets with parchment paper; set aside. Unfold pastry sheets. Cut each sheet into 9 squares.

Toss pulled pork in BBQ sauce. Arrange pulled pork and cheese down center of the pastry squares. Fold two opposite corners over center of ingredients and press to seal. Place on prepared baking sheet. 

Combine egg and water. Brush each pastry with egg wash. Bake 15-18 minutes, until golden brown. Serve warm or at room temperature.
