Scored Potatoes

We have a lot of potatoes at our house, it seems. Maybe they are just a cheap, easy dinner? I don't know, but it's nice to mix things up a bit sometimes. This was a good recipe for that. There aren't any out of the ordinary ingredients or anything, just a little different taste.
  • 4 large baking potatoes
  • 2 Tbsp butter, melted, divided
  • 1/8 tsp paprika
  • 1 Tbsp minced fresh parsley
  • salt and pepper to taste


With a sharp knife, cut potatoes in half lengthwise. Slice each half widthwise six times, but not all the way through; fan potatoes slightly. Place in a shallow baking dish. Brush potatoes with 1 Tbsp butter. Sprinkle with paprika, parsley, salt and pepper. Bake, uncovered, at 350 degrees for 50 minutes, or until tender. Drizzle with remaining butter.

NOTES: We decided they needed way more butter than the recipe called for. We are a butter family, sorry.

Also, we tried to avoid heating up the house in this insane summer we are having, and used the grill. It didn't work. Well, it didn't work as Doug thought it would. We had to crank the heat up a lot higher to get them to cook. Not sure how that works, but that's what happened.
