3-Ingredient Chocolate Lava Dip

We have a vegan in our office now and I've been trying to learn a little about what they will and won't eat. Her birthday was recently so I got some fresh fruit to celebrate. Now, everyone else in our office is most definitely of the non-vegan persuasion so I wanted to make sure the celebration was at least a little more fancy than fruit that we just set out every day. I found this quick recipe online and made the chocolate sauce at work so we could drizzle and dip our way to fruity, birthday happiness.
  • 1 1/4 cup semi-sweet chocolate chips, divided
  • 1/2 cup fat free evaporated milk
  • 1 tsp coconut oil
Place 1 cup chocolate chips, evaporated milk and coconut oil in a medium microwave-safe bowl. Microwave on high for about 1 minute, stir. Continue heating and stirring at 20 second intervals until completely smooth. Stir in the remaining chocolate chips until melted and sauce is smooth. Serve immediately as a warm molten lava dip, or allow to come to room temperature and serve with fruit, graham crackers or other dippers. 

NOTES: I was in a hurry to make this at work and I wasn't paying attention. I put the entire can of regular evaporated milk into the mixture. By the time I realized it, it was too late to change. So our "lava" was a bit liquidy. It still tasted fine, the consistency of the drizzle was just a bit lacking. Even with that issue, if I'd had time, putting the chocolate in the freezer or fridge for a little bit thickened things up nicely (that's what I did with the leftovers).
