I loved these! I like quesadillas in general, but they can be a bit plain. Mostly just chicken and cheese, maybe some onion thrown in. These were full of flavor and texture.
We tripled the recipe so it would make 1 quesadilla for each of us, and we used large, burrito tortillas. There was plenty of food and the large tortillas worked well. It made it a bit easier to "seal" the edges with cheese since the big ingredients could be a little more toward the center.
- 2 large flour tortillas
- 1/4 cup ranch dressing
- 1 cup shredded Mexican blend cheese
- 1/2 cup shredded chicken
- 1/4 cup bacon bits
- 1/2 jalapeno, diced
- 1/2 cup pico de gallo
- cooking spray

Spray one side of a flour tortilla and set it in the frying pan (sprayed-side down). Spread half the ranch over the tortilla in the pan, avoiding the edges. Cover the ranch with the chicken, bacon and half the shredded cheese, making sure the cheese is toward the edges. Drizzle remaining ranch in pan and add jalapenos and pico de gallo. Cover with the remaining cheese and place second tortilla on top, pressing edges to seal with the cheese.
Heat pan over medium-high heat. Carefully flip over when the underside begins to brown and the cheese is melting. Once both sides are browned, transfer to a cooling rack. Cut and serve.
NOTES: I know this says the total time is 5 minutes, but keep in mind, you might have to cook and shred your chicken as well as make your pico de gallo. So count that into your time too. I purchased chicken breasts at the store, added a little water to a skillet with the chicken, covered it and steamed them in there until they were cooked through.
Also, if you are making more than one quesadilla, your pan will already be hot for the second one. Be ready to work quickly and/or turn the heat down before you prep the second one, otherwise you might end up with a burnt quesadilla. We poured our ranch dressing into a cake decorating tube so it was easier to control where the dressing went and sped up the process.
