I needed a simple recipe to try. I like knowing I can make a fancy cocktail at home and don't have to go out and pay $8 for someone else to make it for me. In this case, I should have let someone else make it for me. I will put the recipe below, as I received it, but it needs some definite tweaking.
Maybe the strawberries weren't super ripe and therefore not sweet? Maybe the person who wrote the recipe forgot to include simple syrup?
Whatever it was, it was not sweet at all and needed a lot of changes to make it even drinkable. I think we added at least a cup or two of simple syrup to the recipe to make it even a little sweeter.
- 1 cup white rum
- 3 cups fresh strawberries, hulled and roughly chopped
- 1/4 cup freshly squeezed lime juice
- 1-2 cups of ice cubes
In a blender, combine the rum, strawberries and lime juice. Blend until smooth. Add ice a 1/2 cup at a time until you reach the desired consistency. Pour into a glass and serve.
Serves 6
