Cheesy Onion Chicken Skillet

One-pot recipes are great! Less clean-up always makes things better. This is a very simple recipe with basic ingredients that you might even keep in your house all the time. There was nothing special about the recipe, and it maybe could use a little more seasoning than the recipe calls for, but it was pretty good. I would eat it again.
  • 1 lb boneless skinless chicken breasts, cubed
  • 2 tsp Mrs. Dash Garlic and Herb seasoning blend
  • 2 Tbsp oilive oil, divided
  • 1 medium green pepper, cut into strips
  • 1/2 medium onion, sliced
  • 1 cup (4 oz) shredded Colby-Monterey Jack cheese
Pre-cheese, but still yummy!
Toss chicken with seasoning blend. In a large nonstick skillet, heat 1 Tbsp olive oil over medium high heat. Add chicken, cook and stir 5-7 minutes or until no longer pink. remove from pan. In same pan, add remaining oil, pepper, and onion; cook and stir 3-4 minutes or until crisp tender. Stir in chicken, sprinkle with cheese. Remove from heat; let stand, covered, until cheese melts. 

Serves 4
