Praline Crack

I don't really know what praline is supposed to taste like. I think of Pralines and Cream ice cream. Kinda caramel-y? Maybe not. Anyway, this was my first foray into praline and it was a solid attempt.

Doug was not a fan. However, my co-workers seemed to love it. If I make it again, I will definitely chop the nuts smaller. I bought a small bag of pre-chopped nuts from the grocery store and it made for some sad looking snacks. And dang, those nuts are expensive! Make them stretch as far as you can!
  • 28 graham cracker squares
  • 1 cup butter
  • 1 cup light brown sugar
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup chopped pecans
Preheat oven to 350 degrees. Line large, ungreased cookie sheet with sides (jelly roll pan) with graham crackers, breaking in half if necessary to line pan. Melt butter and sugar in small saucepan over medium heat until it boils. Allow to boil 2 minutes, stirring constantly. Remove from heat and stir in salt and vanilla. Pour mixture over crackers and spread to coat. Sprinkle pecans and bake 10-12 minutes, till bubbly all over. Remove from oven to cool. Cut into squares. Store at room temperature.

NOTES: My graham crackers were pretty mooshy. The ones on the edges got cracklier, but the center ones seemed a bit soggy. I think when I make this again, I will use 2 small cookie sheets and/or cook them a bit longer to make sure it firms up.
