Champagne Cornucopia

Doug is the master of layering drinks. He has learned quite a bit from watching Bar Rescue. The key to getting a nice layered drink is to use a spoon. Turn the spoon over so the rounded part is facing up. Slowly pour the next layer of liquid so that it hits the spoon and rolls gently off and into the glass. If you pour the next liquid directly into the glass, it's coming down with too much force and automatically goes to the bottom or at least mixes a little with the other layers. I still haven't quite mastered it, but I'm learning.

This is a great summer drink. As a kid, people would make a punch out of pineapple sherbet and 7Up. This tastes like the adult version of that. Just enough fruit and chill to be very refreshing.
  • 1 oz vodka
  • 1 oz cranberry juice
  • 3/4 oz peach schnapps
  • 1 oz champagne
  • 2 scoops sherbet
Pour cranberry juice into an over-sized wine glass and set aside. Blend sherbet, vodka and schnapps until smooth. Pour over cranberry juice to produce a swirl effect and layer champagne on top. Garnish with an orange slice.

NOTES: I used orange sherbet because that's what we had on hand. It tasted great.
