Waffle Brownies

I saw this on Facebook a few weeks ago and just had to try it. They had suggestions for how to cook quesadillas, brownies and omelettes in a waffle iron. Doug tried the omelette and it turned out great. I wanted to try the brownies.

A few friends came over to be our guinea pigs. We mixed up the store-bought brownie mix, but added an extra egg to make it more fluffy. We also added some "mix-ins" like peanut butter M&Ms. Topped with vanilla ice cream, it was a great treat for all.

  • 1 box brownie mix
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • any "mix-ins" desired
  • vanilla ice cream
While heating waffle iron, mix together other ingredients in large bowl. After the iron is heated and well sprayed with cooking spray, carefully pour a small amount of batter in the middle of each section of the iron. The batter really expands and grows so start with a small amount. 

Allow to bake for at least 4 minutes, carefully checking as time goes on. Use a fork and spatula to remove the brownie carefully to a plate. Divide and conquer!

NOTES: I like regular brownies better. I think I wasn't a fan of the extra egg because it did feel a lot more cake-y. However, if you are in a pinch, these cook much faster than regular brownies and are much larger. They work very well as a gourmet brownie, I suppose. You can do more with them.
