Mini Banana Maple Pancake Muffins

This worked great for a Bible Study breakfast. Not time consuming, and I had almost all the ingredients anyway. Only thing I would say is that they were not very maple-y tasting. Then again, I used fake maple syrup and you're dipping them in syrup anyway. For a twist, maybe add mini chocolate chips next time?
  • 1 cup all-purpose flour
  • 1 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 2/3 cup low-fat buttermilk
  • 1 large egg
  • 2 Tbsp pure maple syrup, plus more for dipping
  • 2 Tbsp unsalted butter, melted
  • 1 very ripe, large banana, mashed
Heat oven to 350 degrees. Generously coat 24 mini muffin cups with cooking spray or butter. In a large bowl whisk together flour, sugar, baking powder, baking soda and salt. In another bowl stir together buttermilk, egg, maple syrup and butter until just combined. Add the wet ingredients to the dry ingredients and stir until combined. Stir in mashed banana. 

Using a tablespoon, spoon batter into prepared muffin cups. Bake until puffed and golden, about 10-12 minutes. Let cool slightly in pan on a wire rack, Serve immediately with maple syrup for dipping. 

NOTES: You really don't have to serve these immediately after baking them. Just know that the bits of banana will turn black inside the muffins and make them look not as pretty. They don't look disgusting by any means, but they just don't look as nice.
