Our family planned a movie night with Tyler to show him the second Harry Potter movie. We had his mom over to our place and cooked items from the movie to really set the mood. I wanted something simple because I really just wasn't in the mood for some intricate
Herby Roast Chicken with Onion Garlic Mashed Potatoes. Baked potatoes it is! I love this recipe for its simplicity and hands off-ness. You really can't mess it up (unless you don't hear the oven timer go off and you burn the potatoes...yup, that happened).
- 6 Idaho or russet potatoes, scrubbed
- salt and freshly gound black pepper
- toppings of your choice: tomato, butter, sour cream, cheese, garlic, bacon, onion.....
Preheat the oven to 400 degrees. Slice the potatoes in half lengthwise and spread them, cut-side up, on a baking sheet. Bake the potatoes for 1 to 1.5 hourr, until the tops are crusty and golden and the potatoes can be easily pierced with a fork. Season with salt and pepper to taste and serve with desired toppings.
